Deluxe Snack with Goat Cheese

 

This recipe is great not only as a snack, but also as a main dish.

Ingredients:

1/4 cup Tomatoes for salad

Fresh goat cheese

1 slice of The Protein Bread

1/2 tsp Olive oil

1/2 tsp Rosemary

Salt and Pepper to taste

 

Preparation: Wash the tomatoes, cut them into small cubes and mix with olive oil and rosemary. Place mix on top of a slice of The Protein Bread, top with goat cheese, and heat for 5 to 7 minutes on a hot pan.

Tip: Turn this recipe into a main dish by adding a chicken breast on the side! 

 

 

Meatball “Pinchos”

Ingredients:

1 & 1/4 cup Ground meat or steak tartar

1/4 cup Shallots

2 tbsp Capers

4 tsp Mustard

1 Egg

The Protein Bread, sliced

1 tsp Olive oil

Salt and pepper to taste

 

Preparation: Finely chop shallots and capers. Mix together in a bowl with ground meat, egg and mustard. Season with salt and pepper. Make small meatballs with mix and let rest. Cut The Protein Bread into sixteen equal pieces. Taking a toothpick, create your pincho using three meatballs and two slices of bread. Lastly, “paint” the pincho with olive oil and fry on a pan or on the grill. 

 

Piadina-style Sandwich

This recipe is great not only as a light lunch, but also for a picnic with friends!

 

Ingredients:

4 Tomatoes

2 tbsp Chives, chopped

Arugula

4 Olives

1 tsp pesto

1 tsp Olive oil

Mozzarella cheese

2 tsp Parmesan cheese

Serrano ham

6 Basil leaves

4 slices of The Protein Bread

Salt and pepper to taste

 

Preparation: Wash tomatoes and chives. Chop tomatoes into cubes and finely chop the olives and chives. Cut arugula and basil leaves into strips. Mix all of the ingredients in a bowl. In another bowl, mix pesto with the olive oil and season with salt and pepper. In a frying pan, place two slices of bread, topped with tomato and pesto mix, pieces of mozzarella, and the serrano ham. Fry for about 5 to 7 minutes. Add the parmesan cheese and close the sandwiches with the remaining two slices of bread.

 

Deluxe Mushroom Bites

Ingredients:

1/4 cup Mushrooms of your choice

1/8 cup red pepper

1/8 cup Zucchini

1 tsp Olive oil

Lettuce

2 slices of The Protein Bread

Herbs de Provence

Salt and pepper to taste

 

Preparation: Rinse mushrooms, zucchini, and red pepper and cut into slices. Then marinate them with the olive oil, herbs de provence, salt, and pepper. On a frying pan, cook mushrooms and veggies until golden. While the veggies cook, rinse and chop lettuce. Place lettuce, cooked mushrooms and vegetables on top of bread slices.

 

Tomato Salsa

Ingredients:

500 g Tomatoes

1/4 cup Shallots, finely chopped

2 tsp Garlic, finely chopped

15 Basil leaves

70 g Olives, chopped

1/4 cup White balsamic vinegar

1 & 1/2 tbsp Ginger, grated or chopped

Salt and pepper to taste

 

Preparation: Rinse tomatoes and cut into large chunks. Cut basil leaves into thin strips. Mix together chopped tomatoes, sliced basil leaves, shallots, garlic, olives, vinegar, ginger, salt, and pepper. Let rest 2 hours before serving atop slices of The Protein Bread.

 

Goat Cheese Dip

Ingredients:

1 & 1/4 cup Goat cheese

1/2 cup Greek yogurt

20 Basil leaves

3 Garlic cloves

Salt and pepper to taste

Preparation: Finely chop garlic and basil leaves. Mix together in a bowl the garlic, basil, goat cheese, and yogurt. Serve on top of The Protein Bread slices and season with salt and pepper.

 

Tuna Dip

Ingredients:

1 & 1/4 cup Canned tuna

1/2 cup Greek yogurt

1 tbsp White balsamic vinegar

3 tbsp Red peppers

1 & 1/2 tbsp Capers

Salt and pepper to taste

 

Preparation: Drain tuna from any excess water and oils. In a bowl, mix tuna with greek yogurt, capers, chopped red peppers, and olive oil. Serve on top of slices of The Protein Bread and season with salt and pepper.
